Start a Sun Valley watchSun Valley’s list of hard tables is short enough to learn in an afternoon: thirteen restaurants spread between Ketchum, the resort village, a lodge at the top of a gondola, and Hailey further down the valley. Apart from one 9:00am release at the Roundhouse, nobody here is racing a clock. What catches visitors out is the calendar. Two of these rooms date from the late 1930s, several close for the autumn and come back around Thanksgiving, and the best of Ketchum keeps part of the room for people who walk in. This is how each of the thirteen books as of October 2026, taken from the restaurants’ own sites.
Which app, in which town
The platform follows the address. Sun Valley Resort’s own restaurants (The Ram, Gretchen’s and The Roundhouse) book on OpenTable, and so do Michel’s Christiania in Ketchum and both Hailey rooms. The Ketchum independents mostly use Resy: Enoteca, The Covey, Cookbook, Ketchum Grill and Sun Valley Wine Co. Two Ketchum rooms, Grill at Knob Hill and Warfield, take bookings on SevenRooms. If a search on one app shows nothing, check the restaurant’s own site for the booking link before you decide it is full.

Start a Sun Valley watchThe resort’s old rooms open furthest ahead
The Roundhouse has served meals at 7,700 feet on Bald Mountain since 1939, and its OpenTable book runs about 121 days ahead, with each new date opening at 9:00am Mountain. Presidents’ Day Saturday (February 13) has been open since October 15, and by late November the book reaches the end of March. The resort’s page says the gondola ride is included with the prix fixe dinner and asks you to be at the base of the Roundhouse Express 15 minutes early. Lunch also needs a reservation, plus a foot-traffic gondola ticket from the River Run window for anyone without a lift ticket; the resort says those tickets do not sell out. The on-mountain dining guide covers how gondola dinners like this one book.
The Ram, open since 1937, runs about 90 days, so MLK Saturday (January 16) has been bookable since October 18. It is closed now and reopens on Thanksgiving, November 26, with a three-course holiday menu. Gretchen’s in the Sun Valley Lodge lobby runs about 60 days and is the easy fallback: open daily, three meals.
Ketchum keeps seats for people who walk in
The Ketchum independents share a habit a city diner would not expect: they hold part of the room back on purpose. Cookbook takes Resy bookings only up to 14 days ahead and leaves half the restaurant for walk-ins. At Enoteca the ten bar seats are the only seats you cannot reserve; once they fill, the bar runs a waitlist and texts you when a seat opens. The Covey keeps some tables, inside and out, plus bar seats for walk-ins, and its online booking switches off at 5pm for that night. Sun Valley Wine Co says walk-ins are always welcome but suggests booking ski-season weekends. So a sold-out night in Ketchum is rarely the end: put your name in early and have a drink nearby. More on this in how walk-ins work at hard tables and the last-minute ski-town guide.
Closed dates to plan around
In a town this size, the dates a restaurant is closed matter as much as the dates it is full. Sun Valley Wine Co reopens on Tuesday, November 24, 2026. Enoteca closes on Thanksgiving and Christmas Day. The Covey normally serves dinner Tuesday to Saturday, but from December 21 to January 3 it opens every day except Christmas Eve and Christmas Day. Michel’s Christiania closes on Sundays and Mondays. Christmas Day 2026 falls on a Friday, at the start of a holiday weekend. The holiday-week guide works through the dates.
All thirteen, town by town
Ketchum
- Michel’s Christiania (OpenTable, Ketchum). Classic French since 1994: escargots bourguignon, Idaho ruby trout, filet au poivre with morels. Tuesday to Saturday, with the bar from 4:45 and dinner from 5:30. About 60 days of book, so New Year’s Eve opens on November 1. Book Michel’s Christiania with SeatSwiper
- Enoteca (Resy, Main Street). Family-owned, open since December 2012, and built around a wood-fired oven and an open kitchen. It publishes no window. Its rule is a card for four or more and a possible $50 a person for notice after noon on the day. Book Enoteca with SeatSwiper
- The Covey (Resy, Washington Avenue). Hearth cooking, house pasta and dry-aged steak, with counter seats facing the open kitchen and hearth. Cancel within 24 hours and it charges $100 a guest, so the day or two before is when returned tables are most likely to show up. Book The Covey with SeatSwiper
- Cookbook (Resy, East Avenue). Italian, now under one roof with its sister restaurant Scout at 360 East Avenue. Fourteen days is the shortest published book in the valley, so a far-off date simply is not bookable yet. Book Cookbook with SeatSwiper
- Ketchum Grill (Resy, East Avenue). Open since 1991 in the 1885 Ed Williams House and a long-time favorite of locals and seasonal regulars. Nightly from 5pm, no published window. Book Ketchum Grill with SeatSwiper
- Grill at Knob Hill (SevenRooms, North Main Street). American and European classics in the dining room, on the terrace or at the full bar, seven nights a week. It takes bookings online or by phone, and the bar opens at 4:30. Book Grill at Knob Hill with SeatSwiper
- Sun Valley Wine Co (Resy, Leadville Avenue). A bistro inside a wine shop with over 1,000 labels, with Michael Bockelmann’s small plates and a seasonal rooftop deck. Closed until November 24; it sends its reservation link to its reopening email list. Book Sun Valley Wine Co with SeatSwiper
- Warfield (SevenRooms, Main Street). The brewery and distillery’s restaurant, with food made to share, a fire to sit by and mountain views. Open seven days. Book Warfield with SeatSwiper
Sun Valley and Bald Mountain
- The Roundhouse (OpenTable, Bald Mountain). The octagonal 1939 lodge at the top of the Roundhouse Express, fondue at lunch and a prix fixe at dinner. The 9:00am release and the 121-day window are both above; set the alarm in Mountain time. Book The Roundhouse with SeatSwiper
- The Ram (OpenTable, Sun Valley Resort). The resort’s original dining room, with a nightly Heritage Menu of historic dishes and live piano. About 90 days of book. Book The Ram with SeatSwiper
- Gretchen’s (OpenTable, Sun Valley Lodge). Named for Olympic champion Gretchen Fraser, comfort food from breakfast to dinner, about 60 days ahead. Book Gretchen’s with SeatSwiper
Hailey
- CK’s Real Food (OpenTable, Hailey). Chris and Rebecca Kastner’s family-owned room, cooking Northwest food from seasonal, local ingredients. Its book runs about 181 days, so the whole winter is already open. The bar opens at 4:30 and the dining room at 5:00. Book CK’s Real Food with SeatSwiper
- Tundra (OpenTable, Hailey). A global menu with beer, wine and bubbles, dinner Wednesday to Sunday only, and about 60 days of book. Book Tundra with SeatSwiper
Why Hailey is worth the drive
Most visitors stay in Ketchum or at the resort, so Hailey is the part of the valley they check last. CK’s publishes the longest window on the wall and Tundra a two-month one, so both can be booked well before a trip. On a holiday weekend when Ketchum is full, they are worth the drive down the valley. For timing the whole trip, see how far ahead to book dinner for a ski trip.
Having it watched for you
The awkward Sun Valley bookings are the ones that open at an odd moment, like a Cookbook night that only becomes bookable two weeks out or a Covey table someone hands back the day before. SeatSwiper watches for those and books the table when it appears, on your own OpenTable, Resy or SevenRooms account, in your name. Nothing is resold or transferred. The first booking is free, after that it is a flat $5 only when it actually books the table, with no subscription, and a cancellation watch costs $1 to start, charged when the watch begins whether or not a table opens. It works only on those three platforms, needs your account connected, and can lose a race. The walk-in seats in Ketchum are still yours to try in person.
FAQ
How do you get a dinner reservation at the Roundhouse in Sun Valley?
Book on OpenTable. As of October 2026 its book runs about 121 days ahead, with each new date opening at 9:00am Mountain. The resort says the gondola ride is included with the prix fixe dinner, and you should be at the base of the Roundhouse Express 15 minutes before your reservation.
Do Ketchum restaurants take walk-ins?
Several do on purpose. Cookbook keeps half its room for walk-ins, Enoteca’s ten bar seats are first come with a text waitlist, and The Covey holds some tables and bar seats back. Sun Valley Wine Co says walk-ins are always welcome.
When do Sun Valley restaurants reopen for winter?
Each sets its own date. The Ram reopens on Thanksgiving, November 26, 2026, and Sun Valley Wine Co on Tuesday, November 24. Bookings for The Ram and The Roundhouse are already open on OpenTable, so you can reserve before the doors open.
Which Sun Valley restaurants are open on Christmas Day?
Check each one, because the independents close on different days. Enoteca closes on Christmas Day and Thanksgiving, and The Covey closes on Christmas Eve and Christmas Day but opens every day from December 21 to January 3 apart from those two. Christmas Day 2026 is a Friday.
