Start a Jackson Hole watchDinner in Jackson Hole happens in two places about 12 miles of road apart: the blocks around the town square in Jackson, and Teton Village at the base of Jackson Hole Mountain Resort, with Wilson in between at the foot of Teton Pass. The platform mix is unusual for a ski town too. Of the nine tables our curators flag as genuinely hard, seven book on Resy and two on OpenTable, yet the clearest published rule belongs to an OpenTable room, Snake River Grill, which opens each new date at noon. Everything below comes from what the restaurants say on their own sites as of late October 2026.
Snake River Grill and the noon rule
Snake River Grill states its policy in plain words: “Bookings open 60 calendar days in advance at 12:00pm MT.” That is on OpenTable, for groups of up to 10, and the restaurant adds that it cannot seat groups over 10 in the main dining room and does not split groups. So the night you want becomes bookable exactly 60 days before, at noon Mountain, which is 2:00pm in New York and 11:00am in California. A midnight alarm set out of habit is twelve hours early.
For the 2026 to 2027 season the arithmetic comes out like this:
- Saturday, December 26 opens today, Tuesday October 27, at noon.
- New Year’s Eve, Thursday December 31, opens Sunday November 1 at noon.
- MLK weekend Saturday, January 16, opens Tuesday November 17 at noon.
- Presidents’ Day Saturday, February 13, opens Tuesday December 15 at noon.
If your time is gone, the restaurant points you to OpenTable’s notification list, which alerts you when a matching table may have opened, and says its hosts pick up the phone nightly after 3pm MT. Its private room, for up to 16, is offered on the same 60-day clock, first come first served, and for a party over 10 that is the route to ask about, since the dining room will not split you across two tables.
SeatSwiper watches the Jackson Hole table you want and books it in your name the moment one opens. First booking free.
Start a Jackson Hole watchThe Resy side of town says very little
Seven of the nine hardest tables in the valley book on Resy, and only one of them states a window. Trio, the Bradofs’ bistro on Glenwood Street, says on its own site that you “can book up to 60 days in advance via Resy or by calling the restaurant directly.” Local, the same couple’s steakhouse on the square, recommends reservations, sends large parties to a separate request form and closes on Sundays, but names no window. Blue Lion, King Sushi and Sudachi publish none either. With no clock to set, check each Resy page at different times of day across several days rather than once at a guessed hour; the general pattern is in what time Resy releases reservations.
Two of these rooms keep seats off the app altogether. King Sushi’s reservations page says its sushi bar is first come, first served, and Trio describes its bar as a full-service, first-come seat looking into the wood-fired oven and open kitchen. For two people willing to arrive early, that is a plan in its own right. How walk-ins work at hard tables covers how to do it without losing the evening.
Teton Village keeps its own calendar
Where you sleep should decide which half of this list you chase, and the slopeside rooms run on a different rhythm from town. Corsa and Shin Shin, the two restaurants inside Caldera House, are closed for the off-season, and the hotel’s dining page says the same thing for both: “Online reservations open November 1.” An empty Resy calendar for either one today means the winter book is not loaded yet, not that winter is sold out. November 1 is also the day Snake River Grill reaches New Year’s Eve, so a holiday trip has two reasons to be at a screen that Sunday.
Dinner on the mountain itself is Piste Mountain Bistro at the top of the Bridger Gondola, which the resort lists for winter dinner from December 17, 2026, with reservations required on Resy and the gondola ride included with a booking. It may close for private events or weather, so keep a fallback below. Booking dinner on the mountain covers gondola dinners across the ski towns.
Fourteen Jackson Hole tables and how each one books
- Snake River Grill (OpenTable, Jackson). The longtime locals’ room, with an intimate bar pouring from about 300 wines and a menu built on regional farms and ranches. Sixty calendar days ahead at noon Mountain, up to 10 online, no split groups. Book Snake River Grill with SeatSwiper
- Sudachi (Resy, Wilson). Sushi and sashimi named for the Japanese citrus, plus a nightly omakase at $185 a person. Its own site sets the omakase terms: book at least 24 hours ahead, give 24 hours’ notice to cancel, and bring no more than six. The regular dining room states no window. Book Sudachi with SeatSwiper
- Local (Resy, Jackson). Will and Jennifer Bradof’s steakhouse on the town square, with its own butchery, dry-aged steaks and house sausages from local meat and game. Closed Sundays, large parties by request form, no published window. Book Local with SeatSwiper
- Trio (Resy, Jackson). The Bradofs’ other room, on Glenwood Street for about two decades, with inventive seasonal cooking and a lively bar. The one Resy table here with a stated window: 60 days, online or by phone, parties over six by phone. Book Trio with SeatSwiper
- Kampai (OpenTable, Jackson). Contemporary Japanese on Center Street from chef Chris Massad, open Tuesday to Saturday per its site. As of October 2026 its OpenTable book runs about 60 days ahead with no published hour, so each new date is simply there after midnight local. Book Kampai with SeatSwiper
- King Sushi (Resy, Jackson). A log-cabin sushi house on King Street with new-style sashimi and a sister shop in Driggs, Idaho. Its page warns the room is small and reservations limited, and holds the sushi bar for walk-ins. Book King Sushi with SeatSwiper
- Blue Lion (Resy, Jackson). A historic house on Millward Street known for rack of lamb, elk tenderloin and Idaho trout. Resy is its only online route, with no window or hour, so set a recurring reminder rather than one alarm. Book Blue Lion with SeatSwiper
- Wild Sage (OpenTable, Jackson). The Rusty Parrot Lodge’s dining room, with an exhibition kitchen and 48 dining room seats by the lodge’s own count. Its book runs about 90 days, which already covers MLK weekend; Presidents’ Day Saturday opens November 15. Book Wild Sage with SeatSwiper
- The Kitchen (OpenTable, Jackson). Modern American with Asian influences on Glenwood Street, Tuesday to Saturday. About 181 days of book, so the whole winter is already on the calendar and the only question is which nights are left. Book The Kitchen with SeatSwiper
- Corsa (Resy, Teton Village). Caldera House’s slopeside trattoria, with stone-fired Neapolitan pizza, handmade pasta and family-style secondi. Closed for the off-season until winter, with online reservations opening November 1. Book it for the nights you sleep in the Village. Book Corsa with SeatSwiper
- Shin Shin (Resy, Teton Village). The izakaya in the same building: small plates, ramen, sushi and sake in a room designed by Shawn Hausman. Same November 1 date, so book it and Corsa in the same sitting if you want a night at each. Book Shin Shin with SeatSwiper
- Steadfire Chophouse (OpenTable, Teton Village). The Four Seasons Resort’s chophouse, aging heritage cuts and wild game in-house before they meet the fire. About 365 days of book, so the holiday week was on the calendar long ago. Book Steadfire Chophouse with SeatSwiper
- Il Villaggio Osteria (OpenTable, Teton Village). A rustic osteria at the resort base with a salumi bar, a pizza oven and an outdoor fireplace. About 181 days on OpenTable, which makes it the Village fallback when Caldera House is full. Book Il Villaggio Osteria with SeatSwiper
- Gather (OpenTable, Jackson). One block off the square with Snow King views, known for Brussels sprouts, pork buns and house pasta. About 365 days of book, and its site asks parties of 12 or more to call. Book Gather with SeatSwiper
When Jackson tables come back
A noon rule two months out fills Snake River Grill with bookings made before trips are settled, and some come back as plans change; its OpenTable notification list is the restaurant’s own suggested way to hear about them. Sudachi’s 24-hour cancellation notice for the omakase means returned seats there tend to surface about a day before service, so the afternoon before is the time to look. Cancellation policies explains how to read a cutoff, and last-minute ski-town reservations covers what to do once you are already in the valley.
Letting software watch the noon rule
Resy rooms with no published clock and two slopeside books that load on November 1 add up to a lot of checking for one week of dinners. That checking is the job SeatSwiper does. You name the table, the dates and the party size, and it watches and books the moment a match appears: noon on the sixtieth day at Snake River Grill, or a returned Saturday at Local. It books on your own Resy or OpenTable account, in your name (it covers SevenRooms too), and nothing is resold or transferred. Your first booking is free; after that it charges a flat $5 only when it actually books the table, with no subscription, and a cancellation watch costs $1 to start, charged when the watch begins even if no table opens. It works only on those three platforms, it needs your reservation account connected, and on a two-top somebody else is also chasing it can lose the race. For the rest of the trip plan, including how early each ski town opens its books, see how far ahead to book dinner for a ski trip.
FAQ
What time do Snake River Grill reservations open?
Snake River Grill’s own site says bookings open 60 calendar days in advance at 12:00pm Mountain, on OpenTable, for groups of up to 10. It cannot seat groups over 10 in the main dining room and does not split groups. If your time is gone, it suggests joining OpenTable’s notification list or calling the hosts after 3pm MT.
When do Corsa and Shin Shin take reservations for the winter?
Both restaurants at Caldera House in Teton Village are closed for the off-season, and the hotel’s dining page says online reservations open November 1. Both book on Resy. An empty calendar before then means the winter book has not been loaded, not that it is full.
How far ahead can you book Trio in Jackson Hole?
Trio’s own site says you can book up to 60 days in advance on Resy or by phone. Parties over six are asked to call rather than book online, and the bar is a full-service, first-come seat facing the open kitchen.
How do you book the omakase at Sudachi in Wilson?
Sudachi books on Resy. Its site says the $185 omakase needs a reservation at least 24 hours ahead and 24 hours’ notice to cancel, with a maximum of six guests. The regular dining room publishes no booking window.
