Carbone Riviera Reservations: Bellagio Las Vegas on SevenRooms

Carbone Riviera inherited one of the most storied addresses in American dining. Bellagio’s lakefront room stood empty after Picasso closed in 2024, and Major Food Group reopened it on 7 November 2025 as something Las Vegas did not have: a full coastal Italian fish house, 240 seats of terracotta leather and mosaic columns under Murano glass, with work by Miró, Picasso and Renoir still hanging and two terraces pointed straight at the water. Mario Carbone, Rich Torrisi and Jeff Zalaznick built it with MGM, they parked a 33 foot Riva called Fortuna on the patio, and the calendar has been under siege ever since. Here is how the book actually works, with the booking channels, hours and house rules rechecked against the restaurant’s own site as of October 2026.

One restaurant, three separate calendars

This is the single most useful thing to know, and almost nobody checks it. Carbone Riviera takes reservations on SevenRooms, which is the platform its own website sends you to, and the inventory there is split into three distinct seating areas: the Main Dining Room, the Patio, and the Riviera Deck, the floating deck built out over the lake itself. You search them one at a time. A Saturday that returns nothing at all in the main room can still have a deck table sitting unclaimed, and a great many people decide a date is hopeless after looking at exactly one third of the restaurant. Before you write off any night, run the same date and party size through all three.

There is a second, quieter version of that same error. A handful of guests booked this room through Resy in its opening weeks and a Resy listing still exists for it, so returning diners go back to the app they used the first time and hit a wall that is not really there. Begin at the restaurant’s own site or its SevenRooms page. The site’s own wording, as of October 2026: “Reservations for Carbone can be made directly through our website, authorized reservation platforms, or by contacting our restaurant team at 702.693.8105,” and its booking button opens SevenRooms. If all three areas come back empty, that restaurant line and the Bellagio concierge line at (702) 693-6705 are worth a call, and a phone call here is a genuinely separate queue rather than the same one with hold music. When do Carbone Riviera reservations open?

The straight answer, as of October 2026: nobody official says. Neither the restaurant’s site nor Bellagio’s booking channels state how many days ahead the calendar runs or what hour new dates appear, and I won’t invent either. Travelers who have booked it report the calendar running roughly three months ahead. Treat that as reported, not published, because a resort can change its window without announcing it, and check it against the live calendar using the method below.

What this room does not have is the fixed morning ritual people attach to the Carbone name. That belongs to the New York original, which runs on Resy and is covered in when Carbone reservations open. Sit up for a set-hour rush here and you are watching the wrong platform for an event that may not exist.

You can find this room’s current edge yourself in two minutes. Open the SevenRooms book, set your real party size, and step the calendar forward until dates stop offering times in any of the three areas. Note that last date, then look again the next day at about the same time. If the edge moved by a day, the window is rolling and the new date is the one to take; if it did not move, dates are being added in blocks, and checking daily is how you catch the next one. Either way, take your date the first day it appears rather than assuming it will still be there tomorrow. What the outdoor tables cost before you order

The terraces are the reason most people want this restaurant, and they are priced accordingly. Diners who have sat on the Patio and the Riviera Deck consistently report a minimum spend of $175 per person on those two areas. The restaurant does not publish that figure on its website, so treat it as a strong signal rather than gospel and read the terms on the SevenRooms screen before you confirm. What it means in practice is that the two prettiest sections of the restaurant carry a floor the dining room does not, and that floor is precisely why an outdoor table sometimes survives on a quiet weeknight while the indoor book is picked clean. If you were always going to have crudo, a whole fish and a bottle of white Burgundy, the minimum is not a constraint at all. If you pictured a plate of pasta and one glass of wine by the fountains, it is the whole story, and the main dining room is both cheaper and easier to get.

The fountain math, which decides your seating time

The Fountains of Bellagio do not run continuously, and the schedule turns the choice of seating time into an actual decision rather than a preference. Shows run roughly every thirty minutes through the afternoon and early evening until about 7:30pm, then every fifteen minutes from 8pm until midnight. The restaurant opens at 5pm. A 5:30pm table outside therefore sees a show about twice an hour, while an 8:30pm table sees one every quarter of an hour for the whole meal. If the water is the point of the evening, the late seatings are worth far more than the early ones, which is a rare case where the harder to sell slot is the better product. Two caveats worth holding: high winds cancel the fountains outright, so a blustery night outside buys you a beautiful table facing nothing, and the earliest seatings in the main dining room are the easiest tables in the building to get if you are here for the fish rather than the view.

Where the returned tables come from

Nothing about a resort restaurant calendar is settled. Every seat here belongs to someone whose weekend is still moving around them, and a room this size in a casino hotel sheds bookings all week as flights slip, show tickets get swapped and eight people become four. The richest stretch is the day or two before service, when people finally decide which of the several restaurants they are holding they will actually eat at. Because the three areas are separate books, a returned seat goes back into the area it came from, so a released deck table appears only in the deck search and can sit there for a while precisely because most people are refreshing the main room. Same day tables surface too, right up to service. As always, the freed seat is visible to everyone at once and belongs to whoever confirms it first, which is the entire game at this address. The practical bits nobody tells you until you arrive

• Hours. Dinner only. The restaurant’s own site lists Sunday through Thursday from 5pm to 10pm and Friday and Saturday from 5pm to 10:30pm (still the case as of October 2026). The opening announcement said 5pm to 11pm nightly, so the service has tightened since launch, which is normal and worth checking before you plan a late one.
• Dress code. In the restaurant’s words: “Upscale attire is required. Casual hats, swimwear, athletic wear, flip-flops, and athletic slides are not permitted. Men must wear closed-toe shoes.” On age, the site says “We welcome guests 5 years old and above.”
• Order the sea, then the classics. The whole fish program is the reason this version exists: branzino, Dover sole, turbot, sea bream and red snapper, salt crusted or over Japanese charcoal, filleted at the table by captains trained in Carbone’s theatrical style. Add the crudo, the linguine vongole rosso, the two pound lobster and, yes, the spicy rigatoni vodka and the tableside Caesar that came over from the original. Finish with the stracciatella tiramisù or the Sicilian lemon cheesecake.
• Party size and timing. Twos clear far more often than sixes in every one of the three books, and a Monday or Tuesday in a slow convention week is a genuinely different restaurant from a Saturday in March.
