Casa Playa is the coastal Mexican dining room inside Encore at Wynn Las Vegas, and for its first few years you could usually book it. That changed in 2026, when executive chef Sarah Thompson won the James Beard Award for Best Chef: Southwest, the first woman running a Las Vegas Strip kitchen to take the category. The room did not get any bigger. It is still the same corner of Encore next to the poker room, still nixtamalizing heirloom corn in house, still pouring an agave forward bar and sending out plates like the wagyu short rib suadero. Everybody just wants those tables now. Here is how the booking works and where the openings are.
How booking Casa Playa actually works

Memorize the service window, because it defines what you are competing for. Dinner runs Sunday through Thursday 5pm to 10pm and Friday and Saturday 5pm to 10:30pm, with a separate late night service from 10:30pm to 1am on Friday and Saturday. There is no lunch and no brunch. On the release window, be skeptical of anything that states a number. Wynn does not publish a release day, a booking window, or an opening hour for Casa Playa, and neither does the SevenRooms page. The second is the address, and this part is specific to Casa Playa rather than to Vegas in general. It sits inside Encore, adjacent to the poker room and steps from Encore Beach Club. Most hard Strip reservations have to pull diners across a property or across town. Casa Playa’s weekend demand is already in the building, dressed for dinner, deciding where to eat at 7pm on a Saturday.
The third is supply, and there is no clever answer to it. One dining room, dinner only, with the crush landing between roughly 7pm and 9pm. No lunch service to absorb overflow, no second location, no chef’s counter sold separately. When you refresh a Saturday and see nothing, that is the whole restaurant, not a glitch.
The off-peak and back-door angles
You do not have to win a Saturday at 8pm to eat here, and Casa Playa has one back door most Strip restaurants do not:
- The late night service. Friday and Saturday from 10:30pm to 1am, Casa Playa runs a separate seating built around shareable dishes and snacks. It is the most overlooked way in, because everyone fighting over prime tables only looks at the 5pm block.
- The lounge. The restaurant has a lounge with a deep tequila and mezcal list and full cocktail service. Bar and lounge seats are usually the least reserved part of any Strip dining room, but Casa Playa does not publish a walk-in policy, so call and ask rather than driving over on faith. - Sunday through Thursday. Same kitchen, same menu, a fraction of the competition. The only real difference is that the room closes at 10pm instead of 10:30pm.

- Ask about Wynn Rewards. Wynn states its rewards program includes priority seating at select venues. That is no promise about any one restaurant, but it costs nothing to ask while you have the reservations line on the phone.
When cancelled tables come back
SevenRooms returns a cancelled table to inventory the moment the guest drops it, which is why a Saturday that showed nothing at noon can quietly show a 7:30pm at 4pm. The richest stretch is generally the 24 to 48 hours before service, when weekend plans firm up and people release what they will not use.
Vegas adds its own churn. A destination restaurant inside a casino resort gets booked by people whose whole trip can move: a flight slips, a show gets swapped in, a party of six shrinks to two, or someone holds three restaurants for one night and drops two that afternoon. Same-day releases are meaningfully more common here than at a neighborhood room full of locals.
