CES Las Vegas Restaurant Reservations: The Show-Week Playbook

CES 2027 runs January 6 to 9, 2027, with media days on January 3 and 4, across the Las Vegas Convention Center, Venetian Expo, Resorts World, ARIA and Mandalay Bay. It does close to the opposite of what a race weekend does to the city's books. Nothing closes, no street is fenced off, no dining room becomes a ticketed grandstand. Instead the city fills with people who all finish work at the same minute, all have a company card, and all need a table for six where a conversation is possible. That is a narrow, predictable scarcity, beatable if you know which hour and which hall you are in.

When do the January 2027 dates enter the books?

Las Vegas has no synchronized citywide release, so the answer is per venue. Counting back from Wednesday January 6:

Look at the bottom row. A short-window restaurant releases show-week inventory between Christmas Eve and Boxing Day, while every executive assistant in the industry is on holiday. That is the most exploitable date here. The 90-day rooms are the opposite problem: their January has been bookable since early October, which is why a December search finds nothing at a venue nobody thinks of as hard.

The 6pm cliff is the entire problem

Exhibit halls close in the early evening and tens of thousands of people leave at once. The spike is sharper and earlier than a normal Las Vegas night: 6:00pm to 7:30pm sells out first by a distance, the gap between the last meeting and the first party. On an ordinary Wednesday the 8pm slot is the prize. During CES the 8:30 and 9:30 tables are the ones still sitting there in December.

Lunch inverts completely. Attendees eat on the show floor because leaving and returning costs ninety minutes, so midday tables at good rooms are unusually easy that week. If the goal is a real conversation with a client, book 12:30 on the 7th or 8th and you will get a restaurant you could not have got at 6:30.

Book to your hall, not to a best-of list

CES spreads over several miles, and a taxi line at 6:15pm on January 7 costs more time than the appetizer course. Anchor the choice to your hall.

• Convention Center, north end. The nearest serious steakhouse is across the street at Resorts World: Carversteak, on OpenTable's rolling window. SW Steakhouse at Wynn runs a roughly 90-day SevenRooms book with a 24-hour cancellation deadline, which is where its returned tables come from.
• Venetian Expo. The densest cluster of large-format rooms in the city sits in the same complex. Mott 32 is the useful case: its calendar is open more than a year out, so the fight is never about being early, it is the 7pm block flipping from bookable to request.
• ARIA and Mandalay Bay. Far enough south that the 6pm surge arrives diluted.
• Off Strip. The Arts District is ten minutes from the LVCC and barely notices the show; Esther's Kitchen books on a rolling OpenTable window and keeps soft doors. Chinatown on Spring Mountain Road is the other honest answer.

What CES does not make hard

The crunch sits in four places: prime time Tuesday through Thursday, tables of six and up, steakhouses, and anything walkable from a hall. Outside that the city is normal. January 3 and 4 are media days at a fraction of the attendance, and Saturday January 9 empties as flights leave. A two-top at 9pm is bookable in December almost anywhere. The genuinely hard rooms are mostly the ones that are hard in April: the hardest restaurants to book in Las Vegas. The city's other great takeover week is worth reading as a contrast, because F1 week removes whole rooms from the public book and replaces them with ticketed packages, which CES does not do.

The dinners that are not reservations at all

A large share of CES dining is bought, not booked. Sponsor dinners, hospitality suites, vendor buyouts and convention-center catering are sold by event sales teams on contracts months ahead, and none of it exists on Resy, SevenRooms or OpenTable. A private room for thirty on January 7 is an events email sent in October, and a restaurant taken over by a brand activation may never open its regular book for those nights.

Why CES returns so many tables so late

Conference dinners are the most speculative reservations on the calendar: booked in October by an assistant, for a meeting that is not confirmed, at a headcount nobody knows, for an executive whose flight may reroute. Then a keynote overruns, a deal moves to Thursday, and a six-top at 7pm is released at 4:50pm on the day. The returned-table flow is weighted to the final 24 to 48 hours and to same-day late afternoon, exactly when you cannot watch for it.

Two frequent-traveler notes, both checkable. OpenTable launched Gold Tables on 8 July 2026: free, granted after six completed OpenTable reservations in twelve months, unlocking primetime inventory at 500-plus hard-to-book restaurants across 50 US cities plus earlier notify alerts. If you travel for work you may already qualify. And if you plan to hand this to an AI assistant, know the boundary: the ChatGPT booking integration launched 10 August 2026, the Resy path is US-only, and you cannot change or cancel inside the chat.

Covering the 4:50pm release while you are still in a meeting

Reading availability is not the hard part, which is where the current crop of AI booking tools stops being useful: they book what is already showing, and during show week nothing is showing. SeatSwiper waits instead. Set the restaurant, the January date and the party size, and it watches Resy, SevenRooms and OpenTable continuously, then books on your own account, in your own name, the moment a table opens or someone cancels.

Pricing in full, because you set this weeks before you travel: first booking free, then a flat $5 charged only on a successful booking, no subscription. A cancellation watch costs $1 to start, charged when the watch begins even if no table ever opens, and that $1 is not covered by the free first booking. A watch armed in December for January 7 costs a dollar whether or not the week gives anything back. The limits: those three platforms only, so a hospitality suite or a brand buyout is out of reach; it cannot exceed the party size a venue offers online, usually six or eight; and on one returned table it is racing everyone else in the hall, so it can lose.
