Los Angeles does not have one reservation rush. It has three, and they run on different clocks. As of July 2026, the city’s hardest tables cluster into three booking rhythms: short rolling windows on Resy, where both of Evan Funke’s rooms open new dates just seven days out at 9 a.m. PT; first-of-the-month bulk openings, where tiny tasting counters like Holbox, Somni, and Sushi Kaneyoshi put an entire month of seats on sale in a single early afternoon; and long 60-day OpenTable windows at the institutions, Bestia and Bavel, where weekend prime times vanish at or near the 60-day mark. Unlike New York’s reservation war, which is mostly one synchronized morning sprint, LA’s openings skew to daytime Pacific hours, roughly 9 a.m. to 3 p.m., and the 1st of the month is the city’s reservation rush hour. One scoping note before we start: a meaningful slice of LA’s ultra-high-end omakase and tasting rooms sells prepaid tickets through systems outside Resy, SevenRooms, and OpenTable entirely; this guide sticks to the rooms you can actually book on the big three platforms.
First, figure out which clock your restaurant runs on
Rhythm one is the short window. Mother Wolf and Funke each open a single new date every morning at 9 a.m. PT, only seven days ahead, per their own stated policies. That compresses the whole fight into a daily sprint: there is never more than a week of inventory in existence, so “book way ahead” is structurally impossible and the calendar always looks sold out. Rhythm two is the monthly bulk opening: Holbox releases its entire next month on the 1st at 11 a.m. PT, Somni on the first weekday of the month at 1 p.m., and Sushi Kaneyoshi on the 1st at 3 p.m., all as of July 2026. Miss that window and the only route in for the next several weeks is a cancellation. Rhythm three is the long OpenTable window at the big rooms, where you book 60 days out to the date. Two city-wide cushions soften all of this. LA has a genuine walk-in bar culture: Bestia serves its full menu at the bar, Bar Funke is first come first served, Mother Wolf keeps a bar and a small pizza counter off the books, and several rooms below hold real walk-in space by design. And day-before churn is documented: Mother Wolf texts its Notify list around 4 p.m. the day before service, and Nobu Malibu’s cancellation cutoff is the day prior, which concentrates late-breaking availability into the 24 to 36 hours before dinner. The venues, honestly
Mother Wolf
Evan Funke’s Roman palazzo in Hollywood, and the city’s reference point for in-demand: a room of roughly 160 seats that still fills day-of. Books on Resy, seven days out, refreshed daily at 9:00 a.m. PT, per Resy’s own guide to the restaurant and the venue’s stated policy. Prime 6:30 to 8:30 p.m. slots go at or near the 9 a.m. opening, and weekend Notify lists have been reported at 250 to 500 people deep, so the alert alone will not save you. What actually works: book at 9:00 a.m. exactly seven days before your date, aim off-peak (the 5:30 to 6:00 p.m. and 9:15 to 9:30 p.m. seatings are materially easier), and join Notify anyway, because the restaurant texts available times around 4 p.m. the day before service, which is when cancellations surface. Somni
Three Michelin stars, awarded in June 2025 and retained in the June 2026 Los Angeles guide, attached to 14 seats. One 7:30 p.m. seating, Wednesday through Sunday only, $495 per guest before tax, service, or drinks. Do the math and a month of inventory is roughly 280 seats total, for a room with a three-star spotlight on it. The entire following month goes on sale on Resy on the first weekday of each month at 1 p.m. PT, as of July 2026; put that moment on your calendar, because after it passes the only way in is a cancellation on a 14-seat book, and those are as rare as you would expect. One side door worth knowing: the private Cellar dining room books separately, via OpenTable or email per the restaurant’s own FAQ, which is a different and slightly less contested line.
Funke
The Beverly Hills flagship runs the same short clock as Mother Wolf: reservations open seven days in advance at 9 a.m. PT for parties of eight or fewer, per the restaurant’s own Need To Know page. Prime slots go within minutes of the opening. The Hollywood Reporter put the waitlist around 1,500 people when the room opened in 2023; treat that number as historical, but the daily 9 a.m. race is very much current. Miss it and the realistic route is a cancellation inside the week, since inventory never exists further out than that. The pressure valve is upstairs: Bar Funke, the rooftop bar, is first come first served, no reservation required.
Anajak Thai
The James Beard-winning, family-run Sherman Oaks room, and the one entry here with three different doors. The a la carte book, Wednesday through Sunday, runs on Resy (the restaurant’s own site points bookings to its Resy link, and a human reservation team answers by phone and email, Tuesday through Sunday). Fair warning on timing: the release cadence is not publicly stated. Diner threads suggest a rolling refresh around midnight, but the restaurant does not confirm one, so treat that as rumor and check the Resy page for your date rather than camping a minute. Thai Taco Tuesday, 6:15 to 9 p.m., is walk-ins only, no reservations and no takeout, with lines around the block, so arrive early. The monthly Thai omakase releases separately on Resy and sells on its own clock.
Bestia
A decade-plus as one of LA’s most fought-over books, and still the Arts District room everyone wants on a Saturday. Bestia books on OpenTable with a 60-day window to the date, per the policy the restaurant has stated publicly, and weekend prime times (6 to 9 p.m.) are gone at or near the 60-day mark, with weekday primes booking out four to six weeks ahead. So for a weekend, book exactly 60 days out; inside the window, off-peak weekday slots and cancellations are the play. The great equalizer is the bar: around a dozen seats serving the full menu to walk-ins. Line up around 4:30 p.m. for the 5 p.m. open, or come after 9 p.m. on a weekend. Its sibling Bavel runs the same long-window OpenTable physics, and the same weekend-at-the-mark reality.
Holbox
A Michelin-starred tasting counter inside a food hall in Historic South-Central, which is the least pretentious address on this list and one of the hardest seats in the city. The $130 eight-course tasting runs Wednesdays and Thursdays only, and as of this writing the entire following calendar month goes on sale on Resy on the 1st at 11 a.m. PT. Sell-outs are reported anywhere from within days to, in one widely repeated line, about two seconds; either way, if you are not there at 11 a.m. on the 1st, you are watching for cancellations on a handful of counter seats that exist two nights a week. The honest consolation prizes are real ones: the regular Holbox stall serves the same kitchen’s mariscos as walk-up market service, no reservation at all, and the family’s Chichen Itza is next door in the same mercado, open daily.
Sushi Kaneyoshi
An Edomae omakase counter in the basement of a Little Tokyo office building, with a Michelin star and roughly ten seats (commonly reported; the venue does not state a number). All reservations are handled through SevenRooms, per the group’s own site, and the entire coming month opens on the 1st of the month at 3 p.m. PT, then typically disappears in minutes. Nobu Malibu
The most chased celebrity table in Southern California, where the prize is an oceanfront patio seat at sunset. Per its own reservations page, tables open 30 days ahead to the exact calendar date, a credit card is required, and weekends book out immediately, so the first move is simply booking at the 30-day mark (the OpenTable listing is live, and the restaurant also takes phone bookings). The structural detail that helps you: cancellations are accepted until the day prior, and same-day cancels or no-shows cost $50 a head, so people cut loose their backup plans right at that line and availability concentrates 24 to 36 hours out. Patio tables are limited and often held, so request one in advance and reconfirm. Lunch is reported easier than dinner; that comes from diner reports rather than the restaurant, but it is a consistent one.
The LA strategy stack, in order of leverage
- Match the clock. A seven-day room (Mother Wolf, Funke) rewards a daily 9 a.m. habit; a monthly room (Holbox, Somni, Sushi Kaneyoshi) rewards one perfectly timed afternoon; a 60-day room (Bestia, Bavel) rewards booking the moment your date enters the window. Using the wrong strategy on the wrong rhythm is the most common LA mistake.
- Treat the 1st of the month as rush hour. Holbox at 11 a.m., Somni at 1 p.m. on the first weekday, Sushi Kaneyoshi at 3 p.m.: LA sells its scarcest seats in one early-afternoon stretch. Calendar all three moments if you want any of those counters this year.
- Use the walk-in lane like a local. Bestia’s full-menu bar, Bar Funke on the roof, Mother Wolf’s bar and pizza counters, Anajak’s Thai Taco Tuesday: these are held for walk-ins on purpose. Show up early on a weekday and the “impossible” room is often a short wait.
- Watch the 24 to 36 hours before your date. Mother Wolf texts its Notify list around 4 p.m. the day before; Nobu Malibu’s day-prior cancellation cutoff pushes freed tables to the same stretch. Day-before churn is a real second market in this city.
- Do not rely on Notify alone. The lists run hundreds deep at the top rooms here, and an alert everyone receives at once is a race, not a reservation. Use it as one input, not the plan.
