Trivoli Tavern sits down the cobblestone steps of the historic courtyard at 114 North Green Street, in the middle of the West Loop’s Restaurant Row. Behind the royal red storefront is a tavern built on strong drinks, coal fired seafood, fresh oysters and charred butcher’s cuts, with an adjoining shellfish and sushi room called Lobster Bar sharing the address. It is a Hogsalt restaurant, same group as Au Cheval, Gilt Bar and 4 Charles Prime Rib, which explains a good share of the demand. Close to 19,000 Resy ratings averaging 4.8 stars explains the rest. Getting a Trivoli Tavern reservation is less about luck than about knowing which clock to watch, and this room has a very particular one.

How booking Trivoli Tavern actually works

Trivoli Tavern books on Resy, and the rule is published on the restaurant’s own reservations page: reservations are available up to 21 days in advance, with each new date becoming available at 9 AM. That is 9 AM Central, and it is a rolling calendar rather than one weekly batch, so exactly one brand new date joins the book every morning.

The part worth internalizing is which morning belongs to which night. Because a 21 day window counts the target day itself, the date that becomes bookable at 9 AM is twenty days ahead of the morning you are standing in. Resy’s inventory confirms it: every table for Friday, September 18 went on sale at 9:00 AM Central on Saturday, August 29, while Saturday, September 19 had nothing yet because its morning had not arrived. So a Friday night opens on a Saturday morning, and a Saturday night opens on a Sunday morning. Set the alarm for the wrong weekday and you miss by a full day. Two smaller mechanics: the room books parties of up to 8 online, with 9 or more going through the private dining inquiry form, and a $2.50 per person reservation fee rides on every online booking. It secures your seats rather than acting as a deposit, so it never comes off your bill.

Why the Trivoli Tavern table is so hard to get

Here is what makes this room unusual, and the reason the calendar will mislead you at a glance. Trivoli Tavern is not sold out. It is sold out at prime time.

A sweep of every date in the 21 day window, run on a Saturday afternoon in late August 2026, found between 10 and 18 bookable times for a party of two on each upcoming Friday and Saturday. That looks like an easy table. Not one of those times fell between 6pm and 9pm: not on the Fridays of September 4, 11 and 18, not on the Saturdays of September 5 and 12. What survived was midday, roughly 10:30am through 3pm, plus a lone 10:30pm on one Friday. Widen to a party of four and a few 4pm slots and a run from 9:45pm to 10:30pm appear, but the dinner band stays empty.

The cause is arithmetic. This is an intimate room running one long service, late morning until 10pm or 10:30pm, and the two hours every diner in Chicago wants are the same two hours. When the 9 AM opening lands, the 6:00 through 8:45 seatings go first and go together, while nobody races for a 2:15pm on a Thursday. The off-peak and back-door angles

If your heart is set on 7:30pm on a Saturday, the plan is simple: be on Resy at 9 AM Central on the Sunday twenty days earlier. If you can bend at all, this restaurant has more genuine back doors than most hard tables in the city.

• The bar takes walk-ins and serves the full menu. The restaurant says so plainly on its own site, and there is no reservation fee on a walk-in. For a party of one or two, this is the best move. Here is how walk-ins work at hard tables.
• Lobster Bar takes no reservations at all. The adjoining shellfish, sushi, sake and slushie room is first come, first served, and its menu is served alongside the full Trivoli menu. It runs 4pm to 10pm Sunday through Thursday, 4pm to 10:30pm Friday and Saturday. Same courtyard, same kitchen, no alarm.
• Lunch, which almost nobody fights for. The kitchen serves from 11am Wednesday through Friday, and those slots sat open in quarter hour increments on nearly every date checked.
• Weekend brunch before 2pm. Saturday and Sunday open at 10:30am with brunch until 2pm and the full dinner menu available alongside it, so you can order the dinner food at 11am on a Saturday.
• Monday and Tuesday, 4pm to 10pm. The only nights in the sample where a two-top in the 8pm hour survived to within three weeks of service. No midday service either day, so the book starts at 4pm.
• Try the larger party size. Four-tops showed more surviving times than two-tops on the same dates, including real 7pm and 8pm seatings on weeknights and Sundays.

When cancelled tables come back

The second way in is other people’s plans falling apart. Because Trivoli charges a small per person fee rather than holding a large deposit, cancelling is cheap, and that cuts both ways: tables come back, and often. Resy returns a cancelled table to inventory immediately, so a Friday that showed nothing between 6pm and 9pm for three straight weeks can suddenly carry a 7:15pm on the Wednesday before. The densest window is the 24 to 48 hours before service, plus the afternoon of the day itself. The catch is obvious. A 7:30pm Saturday two-top here is the most contested thing on the calendar, and when one reappears it is gone in the time it takes to open the app. Worth knowing too: Hogsalt and Resy both prohibit selling, trading or distributing a Trivoli reservation, and say a resold table will be cancelled without notice and the account flagged. The table has to be booked on your own account.
