Este is Fermin Nunez and Sam Hellman-Mass’s coastal Mexican seafood room on Manor Road in East Austin, the follow-up to their East 6th favorite Suerte. The tagline is mariscos con onda, seafood with attitude, and the kitchen runs on charcoal: aguachiles, ceviches, raw oysters, and charred whole fish that land with the swagger of a Sinaloa beach town. The dining room is bright and small, wrapped in artisan tile and opening onto a wide outdoor deck, which is exactly why a prime weekend table here is one of the harder ones to lock in Austin. Este takes bookings on OpenTable, releases them on a rolling window, and sees the good times claimed fast, so getting in is less about luck and more about knowing when the seats appear.

How booking Este actually works

OpenTable is Este’s only online booking channel, and the restaurant confirms it on its own reservations page. Tables are released up to 30 days in advance on a rolling window, so the calendar always shows roughly a month out and a new date joins the pool each morning. Online reservations cover parties up to 8 guests for dinner. Groups of 10 or more are handled as private events through a separate form on Este’s site rather than the standard booking. One quirk worth knowing: Este holds your table for 15 minutes past the stated time before it goes back into the pool, so build in a buffer and use the host line on their site if you are running behind.

Why the Este table is so hard

Este is a small room carrying national attention. Nunez, who grew up in Torreon and made his name at Suerte, has been named to Food & Wine’s best-chefs lists and was Eater Austin’s Chef of the Year in 2018, and Este has sat on nearly every Austin best-of list since it opened in 2022. That demand meets very little inventory.

Weekend prime times, roughly 7 to 8:30 pm Thursday through Saturday, book out two to three weeks ahead, and the outdoor deck seats go first whenever the weather is good. • Aim early or late. A 5:30 or a 9 pm slot lists far more often than the 7:30 peak, and the charcoal menu is identical.

• Book lunch or happy hour. Both sittings are much easier to land than dinner and are a low-stakes way to try the aguachiles and oysters.
