Chug’s Diner sits at 3444 Main Highway in Coconut Grove, the most casual room in Michael Beltran’s Ariete Hospitality group and the one carrying a Michelin Bib Gourmand every year since 2021. The food is diner food run through Miami: a cast iron pancake built for the middle of the table, a Cuban-American sandwich, croquetas and guava pastelitos made in house. Nothing about the check or the room says hard reservation, and that is the problem. A Bib Gourmand hung on a neighborhood diner pulls the whole city into a small space, and the SevenRooms calendar shows the strain, just not where most people look for it.
How booking Chug’s Diner actually works
Chug’s takes reservations on SevenRooms, linked straight from its own site. It is not on Resy and not on OpenTable, so searching there gets you nowhere. The part worth knowing before you start is that SevenRooms shows two different kinds of time side by side here, and they are not interchangeable.
- Instantly bookable slots. Pick the time, enter your details, the table is yours. Checking the live calendar on 29 August 2026, these existed only on Wednesday through Saturday, 5:00pm to 9:45pm, in 15 minute increments.
- Request slots. Everything else. You submit a request and the restaurant decides whether to confirm it. On the same check, every daytime time from 7:30am to 3:00pm was request only, along with 3:15pm to 4:45pm, the 10:00pm close, and the whole day on Sunday, Monday and Tuesday.
That split held on every date tested, near and far, at every party size from two up to ten. So if you want a table you can confirm yourself in thirty seconds, you are booking dinner between Wednesday and Saturday. There is no ticket and no deposit either: on the slots checked, SevenRooms did not require a card to hold a standard table and set no minimum spend. There is no release hour to set an alarm for. Chug’s runs a rolling window of roughly 90 days that advances continuously rather than opening a fresh date at a fixed time each morning. The 29 August check makes that concrete. At 5:53pm Eastern, 26 November was fully bookable from 5:00pm to 9:45pm, 27 November was bookable only through 5:45pm, and 28 November had nothing instantly bookable at all. Seven minutes later, at 6:00pm, the 6:00pm slot on 27 November had turned bookable too. The horizon simply tracks the clock, 90 days out, and new inventory appears one quarter hour at a time, all day long. That is why nobody publishes an open time for this restaurant. The question is not what morning to set an alarm for. It is whether you are looking at the minute your slot crosses the line.
Why the Chug’s table is so hard
Beltran’s Michelin-starred flagship Ariete is a few doors up the same street, and the two rooms feed each other. Chug’s costs a fraction as much, seats a diner-sized room, and serves the meal everyone in Miami wants on a Saturday morning. The Bib Gourmand has renewed every year since 2021, long enough for the crowd to be permanent rather than a spike.
The demand shows up in the shape of the book rather than a sold-out calendar. Brunch, the service a diner is famous for, offers no self-serve slot on any day of the week: every time from 7:30am to 3:00pm goes into the request queue, on every date checked, months out. A restaurant that hands its whole daytime service to a queue is one whose daytime is already spoken for. Once you know the split, the workarounds are unusually clear at Chug’s:
- Book dinner, request brunch. Wednesday to Saturday, 5:00pm to 9:45pm, is the only window you can confirm yourself. If your heart is set on the cast iron pancake, submit the request, but plan the trip around a dinner you actually hold.
- Take the real edges of dinner. The 5:00pm and 5:15pm seatings and the 9:30pm and 9:45pm ones clear far more often than a 7:00pm or 8:00pm. Same kitchen, no fight.
- Wednesday and Thursday over Friday and Saturday. The instant band runs all four nights identically, so the only variable is how many people are after it.
- Come for happy hour. Chug’s lists happy hour from 3:00pm Wednesday and from 5:00pm Friday through Sunday, with $0.99 martinis Wednesday to Sunday between 6:00pm and 7:00pm with a food purchase.

Chug’s states its terms on the SevenRooms booking itself: cancel no less than 24 hours before your reservation, and no shows or late cancellations are subject to a $25 per person fee applied to the card on file. That 24 hour line is the part to plan around, because it is the moment guests who cannot make it get a financial reason to release the table rather than quietly not turn up.
