Online party size caps at eight, so a group larger than that starts with an email rather than a refresh. Second, there is no ticket or prepaid deposit for an ordinary table. You are holding a normal reservation with a card on file. Price is the real pressure here. The flagship is a birthday. Vino is priced to be a Tuesday, so the demand is not one time visitor demand, it is repeat neighborhood demand stacked on top of visitor demand, with Coconut Grove date nights and anniversaries piled on again. The dining room runs as a single service area with no overflow floor to absorb a busy Saturday, and almost everybody aims at the same 7:00 to 9:00 p.m. band. The off-peak and back-door angles
