Bavette’s Bar & Boeuf is the reservation Chicago sets an alarm for. There’s no tasting-menu ticket and no secret phone line anyone will confirm: the whole game comes down to one specific minute, 9:00am Central, exactly 21 days before the night you want to eat ribeye by candlelight in that dark River North room. Win the minute and you’re in. Miss it and the calendar looks bricked for three weeks. This autumn, though, the first question isn’t the minute. It’s whether the room is open at all. Here’s the honest answer as of October 10, 2026, then the playbook for the morning the book comes back.

Is Bavette’s closed?

Yes, temporarily, not permanently. The restaurant’s own Chicago page says, as of October 10, 2026: “We are temporarily closed and will reopen in mid-November. We look forward to serving you soon.” Its last service before the break was Saturday, September 19, 2026, as Time Out Chicago and Hoodline both reported on August 27, and the reopening is expected in mid-November 2026. No exact reopening date had been announced as of October 10, 2026.

Why it closed is less settled. Time Out Chicago wrote that the restaurant had not given a specific reason. Hoodline wrote that local reporting suggests the break is for routine interior maintenance and renovations rather than any operational trouble. Treat that as reported, not as something Bavette’s has said. What matters for a booking is the same either way: the whole restaurant is shut until it reopens, bar included, so there is no walk-in workaround in the meantime, and no date inside the closure can be booked. If Resy shows nothing for the weeks ahead, that is the closure, not a sellout.

How to be first in when it reopens

The rules for the reopened room are already posted on the restaurant’s reservations page, word for word: “Reservations are available up to 21 days in advance, with each new date becoming available at 9 AM.” That is a rolling window, so on October 10 the furthest date it could reach is October 31, which is still inside the closure. If Bavette’s keeps its usual window, the first reopening dates should appear on Resy roughly three weeks before the doors open. To take a purely hypothetical date: a reopening on Saturday, November 14 would, under the normal 21 day rule, become bookable at 9:00am Central on Saturday, October 24. That is arithmetic, not an announcement. A restaurant coming back from a break can load its first weeks all at once or on shorter notice, so don’t plan around the math alone.

The restaurant takes online reservations “for parties of up to 6 guests,” and its own page notes that “A $2.50 per person reservation fee will be added to all online reservations to secure your seats.” That fee is Bavette’s, charged on every online booking.

How Bavette’s reservations actually open

Bavette’s books on Resy, and the restaurant’s own reservations page points you straight there. The schedule, in the restaurant’s words as of October 2026, is 21 days in advance on a rolling basis, with each new date becoming bookable at 9:00am Central, and Resy’s published guide to the restaurant says the same. Rolling is the operative word. There’s no monthly batch here: every morning at 9:00, exactly one new date appears, the one 21 days out. Chicago has rooms at the other end of that spectrum, like Sushi by Scratch Restaurants: Chicago, whose own FAQ says it releases a full month of seats at once, but Bavette’s is a pure daily lottery with a single date on the line each morning.

Two consequences. Second, the speed: Resy itself says weekend evening slots disappear within hours of a new date opening, and for a prime Saturday 2-top you should plan as if the real contest is over within the first few minutes.

Winning the 9:00am minute

• Do the date math the night before. Twenty-one days is not “three weeks-ish.” If you want Saturday the 25th, that date opens at 9:00am on the 4th. Count it on a calendar, set the alarm for 8:55, and know exactly which seating you’ll tap.
• Be logged in before 9:00. Signed into Resy, party size set, the Bavette’s page already open. People who win synchronized openings aren’t faster typists; they’ve just removed every step between 9:00:00 and the confirmation screen.
• Book the 2-top. Bavette’s doesn’t publish its table counts, and reservations stop at six guests, but the demand-lottery math holds everywhere: pairs have the most inventory and the best odds, and every extra seat you add multiplies the difficulty.
• Aim off the peak. Saturday at 7:30 is the contested square. Weeknight dates and edge-of-service times typically survive the morning far longer, which squares with Resy’s own within-hours framing for weekends.
• Don’t hunt for a secret channel. Bavette’s doesn’t publicly state any hold-back policy or phone allocation. The two documented ways in are the 9:00am book and the bar. Spend your energy there.

The bar: the worst-kept secret side door

Here’s what makes Bavette’s kinder than its equivalents in other cities, once it reopens. In the restaurant’s own words: “We welcome walk-ins to join us at the bar where we serve the full menu.” Resy’s guide says the same, so this isn’t folklore. You aren’t consoling yourself with a snack list; it’s the same dinner, at a counter, with better people-watching.

It’s also the most Chicago mechanic in the whole system. This city’s hardest rooms almost all keep a no-reservation pressure valve: Monteverde holds bar and counter seats, Beaumont’s runs service around a big central bar, Asador Bastian opens its Bar Room at 4pm, and Au Cheval runs its famous first-come list. Bavette’s version is simply the most complete, because nothing about the food is downgraded.

Playing it well: keep the party at one or two, since singles and pairs absorb into bar seats far faster than a four; arrive right at opening or come late; and on a peak Saturday, expect a real wait. The restaurant publishes no numbers on that, but the demand for the room does the talking.

Cancellations: the 24-to-72-hour window

Bavette’s says nothing official about how canceled tables come back, so treat everything here as pattern, not promise. Third-party availability trackers commonly report returns clustering 24 to 72 hours before the date, which fits how reservation lotteries behave generally: plans firm up as the night approaches, and tables shake loose in the final two or three days. The Hogsalt plan B

Bavette’s belongs to Hogsalt Hospitality, and the group’s other River North rooms are the best fallback structure in the city, and the obvious places to spend the closure. Gilt Bar and Ciccio Mio both book on Resy, and third-party trackers report the same 21-day, 9:00am Central rhythm (that part is unofficial, so confirm the window on each Resy page), while both are meaningfully easier tables to win. Ciccio Mio holds a Michelin Bib Gourmand, so calling it a consolation prize is unfair to the consolation. Au Cheval, the group’s burger shrine, books a shorter window, 14 days out as of July 2026, and runs that first-come list besides.
