Maple & Ash Reservations: How to Book Ahead in Chicago

George Yates · Founder, SeatSwiper · Updated September 10, 2026

How far in advance should you book Maple & Ash in Chicago?About three months. The Maple & Ash dining room books on SevenRooms through mapleandash.com, and as of September 2026 the calendar took confirmed reservations roughly 90 days ahead on a rolling basis; past that edge SevenRooms takes a request rather than a confirmed table. No release hour is published, so treat the front edge as a day rather than an alarm. The 7:30 to 8:15 block on a Saturday goes first, roughly two months out, while the 4:30 open, the 9pm onward seatings, weeknights and Sunday brunch stay open far longer. Parties of ten or more go through the private events team.

Maple & Ash sits at 8 West Maple Street, on the corner where the Gold Coast runs into State Street, and the room was built to be looked at. The Atrium at the center of the dining room carries twenty four foot ceilings and a custom pearl necklace chandelier hanging through them, and everything on the menu is organized around an open hearth. The fire roasted seafood tower is the dish people photograph, and it is deliberately the opposite of the cold iced platter every other steakhouse sends out: Maine lobster, Alaskan king crab, Gulf shrimp, Manila clams, roasted oysters and seared scallops, straight off the fire under garlic butter and chili oil. Danny Grant’s kitchen also runs a four course chef selected dinner that the restaurant cheerfully calls the IDGAF menu. None of that makes this an impossible table. Maple & Ash is genuinely winnable. It is simply a room whose best nights get decided months before anybody sits down, so this guide is about deciding once, in September 2026 terms, and then not thinking about it again until the valet takes your keys.

How far the calendar actually reaches

The dining room books on SevenRooms, linked from the Reserve button on mapleandash.com. The number that matters is not written anywhere on the site, but the calendar answers plainly if you push it. Checked on 10 September 2026, the book took confirmed reservations through 9 December and stopped there. Ask for 10 December and SevenRooms no longer offers a table; it offers to take a request instead. That is a horizon of about ninety days, roughly three months, and it moves forward daily, so one fresh date joins the confirmed edge each morning rather than a whole month appearing at once.

Two things follow from that. Your target night has one particular morning on which it turns into a real, confirmable table, and that morning is three months earlier. Count back ninety days and put that date in your calendar rather than the dinner date, because the dinner date will look after itself once you hold the table. A graduation dinner in early June is a March decision. A wedding anniversary in late October is something you settle in July. The second thing is gentler: the restaurant publishes no release hour, so there is no minute to sprint at and no alarm to set. Treat the front edge as a day rather than a moment, look in the morning, and if you are a few hours late it will almost certainly still be sitting there. The general version of this, for any room with a long runway, is in how to book a table months in advance.

Which seatings go first, and how early

The useful question about a calendar like this is not whether a date is open but which parts of the evening still are. Dinner runs 4:30 to 11:00 on Friday and Saturday and 5:00 to 10:30 Sunday through Thursday, and those long services empty out in a very consistent order. Three Saturdays, all read on the same September morning, tell the whole story.

That last reading is the planning problem in one line. The block that goes first here is 7:30 to 8:15 on a Saturday, and it starts going about two months ahead. Everything else on that Saturday survives another month or so, then the half hour on either side of the prime block goes, then the shoulders close inward, until in the final week the only things standing are the very start and the very end of service. So if you want a Saturday at eight, claim it around the ninety day edge and stop negotiating with yourself. If you are relaxed about the clock, a 9:15 in the middle of a busy room is available far later than most people assume, and the kitchen is at full tilt.

Weeknights behave like a different restaurant altogether. A Wednesday five weeks out had every single seating from 5:00 to 10:30 available, with nothing taken at all. Sunday brunch, which runs 10:30 to 2:00, was wide open even inside the same week. Tower Hour, the bar and lounge sitting where a mini fire roasted tower is $45 and selected wines and cocktails are $15, runs daily until 6:00pm and shows its own bookable slots for small parties. If your occasion can move and your date cannot, a Wednesday here costs you nothing except the crowd.

The dates that fill before anything else

This is a celebration room and the restaurant says so itself: its own private events pages list milestone birthdays, engagement dinners, rehearsal dinners, bachelor and bachelorette parties and corporate entertaining as the occasions the spaces are built for. That is the demand shaping the Saturday curve above. December is the heaviest stretch of the year, because holiday parties fill the private rooms and the main dining room at the same time, and a December Saturday is the single date most worth claiming at the ninety day edge, which lands in September. Late May into early June brings the graduation dinners, and those families book early and do not move.

Three specific dates behave differently enough to plan around. Thanksgiving is not the usual dinner service at all; the calendar switches to its own shift running from 1:00pm to 7:45pm, so the night you are picturing is an afternoon. And Christmas Eve, Christmas Day, New Year’s Eve and New Year’s Day do not appear on the ordinary book at all, which means those are a conversation with the restaurant at chicago.reservations@mapleandash.com or on (312) 944-8888 rather than a click, and a conversation you want to start well before December. For a date you cannot move at all, the anniversary dinner guide covers how to time that kind of booking, and the Chicago hard tables guide covers the rooms in this city where the arithmetic really is unforgiving.

Party size decides which book you are in

Anything from one to eight guests is an ordinary online reservation in the main dining room. At ten and above the calendar stops offering confirmed tables and hands you to the private events team instead, which is not a brush off but a genuinely better route: the Atrium seats 60 or holds 75 standing, the State Street Room seats 30, and there are three smaller semi private options, a long family style table in the middle of the main dining room for 10 to 20, the Lounge Nook for 10 to 16 and the Maple Street Nook for 10 to 14. A group that size needs a lead time measured in months anyway, so start it early and stop refreshing a calendar that was never going to take you. Two numbers to know before the bill lands: parties of five or more carry an automatic 20 percent gratuity, and a 3.5 percent charge is added to all transactions toward staff health insurance and benefits.

Lock the date once, then let it go

Book it the morning it opens, then spend two minutes loading everything else onto the reservation so the night runs itself. Personalized menus are complimentary and all the restaurant asks is that you have it noted on the booking. An outside cake is allowed if it comes from Bittersweet Bakery, which the restaurant partners with, and there is a $5 per guest cutting fee. Corkage is $50 for a 750ml bottle with a limit of two, and $100 for a magnum, which counts as two, so a bottle you have been saving is worth bringing. Valet sits right next door at $22 cash only, with overnight at $40, and the dress code is stricter than most Chicago rooms: no caps, no athletic wear or athletic sneakers, no faded or ripped denim, and no open toed shoes for men. Tell the whole table that when you book rather than on the day.

If plans shift, the terms are forgiving for something reserved three months out. Cancel at least 24 hours before the seating and there is no charge; inside that, a $50 per person late cancellation and no show fee applies. One day of notice on a booking you made in September is not a trap, it is a courtesy, and it is the only deadline you have to remember between now and dinner. If your date turns out to be inside the next week or two rather than months away, the companion piece on getting a Maple & Ash table at short notice is the one you want instead.

Full disclosure: SeatSwiper is my product. Everything in this guide works without it. The last section explains where it helps and exactly what it costs.

Watching for the better time

Here is the move almost nobody planning this far ahead makes. A table booked three months out is exactly the kind of table people hand back. Plans change, a trip moves, a party of six turns into a party of three. So the calendar for a Saturday in November is not frozen between the day you book it and the day you eat, and the 7:45 that was unavailable when you settled for 9:15 is a real upgrade if it comes back four days beforehand. That is the honest reason a watch is worth running on an easy table and not only on a brutal one. It is not rescuing you from failure. It is quietly trading up.

That is work for software rather than a person opening a booking page every evening. SeatSwiper watches the exact Maple & Ash dining room table you want, your date range, party size and the times you would actually prefer, and books it the moment one opens, whether that is the morning your date reaches the ninety day edge or the hour somebody cancels. It books on your own SevenRooms account, in your own name, and nothing is resold or transferred. It works on Resy, SevenRooms and OpenTable, and this room is on SevenRooms, so it can act here. The first booking is free, then it is a flat $5 and only when it actually books you a table, with no subscription; putting a watch on one specific sold out date to catch a cancellation costs $1 to start. Set the window, name the seatings you would prefer, and get on with the three months in between.

FAQ

How far in advance can you book Maple & Ash in Chicago?

About ninety days. The restaurant does not publish a window, but the calendar shows it: checked on 10 September 2026, SevenRooms took confirmed dining room reservations through 9 December and offered only a request from 10 December onward. The edge moves forward daily, so one fresh date becomes confirmable each morning. Count back roughly three months from the night you want, put that morning in your calendar, and book then. There is no published release hour, so this is a day to remember rather than a minute to sprint at.

Does Maple & Ash use Resy, SevenRooms or OpenTable?

SevenRooms. The Reserve button on mapleandash.com sends you to the venue’s own SevenRooms calendar for the Chicago dining room, and the widget lists Main Dining Room, Upstairs Lounge and Tower Hour as separate bookable seating types. If a listing elsewhere points you at another app, the SevenRooms calendar linked from the restaurant’s own site is the one to trust. Anything the calendar will not take goes through chicago.reservations@mapleandash.com or (312) 944-8888, which also accepts a text.

Which Maple & Ash seatings are hardest to get, and which stay open?

The 7:30 to 8:15 block on a Saturday goes first and starts going about two months ahead. Read in September 2026, a Saturday nine weeks out was missing only those four slots, a Saturday five weeks out had lost everything from 5:00 to 8:45, and a Saturday nine days out had only the 4:30 open and the 10:00 to 11:00pm run left. The 4:30 open, the seatings from 9pm on, weeknights, and Sunday brunch from 10:30 to 2:00 stay available far longer. A Wednesday five weeks out was completely open.

What is Maple & Ash’s cancellation policy if plans change?

Cancel at least 24 hours before the seating and there is no charge. Inside that window a $50 per person late cancellation and no show fee applies, per the policy shown on the SevenRooms booking screen. For a table reserved three months ahead that is a forgiving deadline: one day of notice is the only thing you have to remember between booking and dinner. Confirm the current terms on the booking screen, since policies change.

Can you book a large group at Maple & Ash Chicago?

Up to eight guests books online as an ordinary reservation. At ten or more the calendar stops offering confirmed tables and routes you to the private events team, which is the better path anyway: the Atrium seats 60 or holds 75 standing under the room’s 24 foot ceilings, the State Street Room seats 30, and there is a family style table for 10 to 20 in the main dining room plus the Lounge Nook for 10 to 16 and the Maple Street Nook for 10 to 14. Parties of five or more carry an automatic 20 percent gratuity, and a 3.5 percent staff benefits charge applies to all transactions.
